The grape varieties are harvested at perfect maturity respecting the cycle of the moon and applying biodynamic preparations - destemming, crushing, alcoholic fermentation in stainless steel vats. Then, the wine is aged for 4 months in barrels during the malo-lactic development. We then assembled our wine with 50% of the full tank and 50% of the barrel.
The Javolongo biodynamic cuvée is made up of Syrah and Grenache. It is aged in French oak barrels which magnifies these typically Rhone grape varieties by dressing them with sweet bourbon vanilla notes.
This wine, the quintessence of sweet spices and ripe black fruits will go wonderfully with a tournedos , rossini or a dark chocolate cake.
